Reindeer, the traditional offering of Lapland cuisine, is often served as a simple sauté or in a rich stew. Healthy, tasty and natural, reindeer is also an excellent fit for fine dining. The book portrays reindeer as a means of livelihood and an emblem of the Great North. Finland’s best-known top chefs, including Hans Välimäki of the Michelin starstudded Chez Dominique and the local food proponent Markus Maulavirta, take to the wilderness during reindeer separation and prepare mouth-watering meals – out of reindeer, naturellement.
